If there is one quintessential Filipino pastry that I enjoy eating mapa-almusal man, merienda or even as dessert - that would be ensaymada. Sa ngayon, iba't ibang variations na ng ensaymada ang matitikman natin. From the most usual flavors like ube, caramel, and chocolate. Meron pa ngang mango and other fruit-flavored ones. Pero syempre, the best pa rin ang classic cheese ensaymada with lots of cheese on top. Just like these Vernon Pastries' Queso de Bola Ensaymada that we had yesterday for merienda. Not only they use real butter, they also grind their queso de bola with the rest of the cheese which gives their ensaymada a strongly flavored and finely textured powdered cheese topping. Dahil nga queso de bola or Edam cheese yung ginamit nila, I definitely got that sharp taste but it's soft, buttery, and delicious. Isa pang merienda treat that we tried from them were their Cheese Rolls that honestly is really addicting. Each roll is filled with a generous amount of cheese and I could tell that they didn't scrimp on the finest ingredients. They're remarkably soft, fluffy and cheesy, and has the perfect balance of buttery and sweetness. I also love that each ensaymada and cheese roll is wrapped neatly in the box so I can easily share them with my family and friends or I could even store them for several days.
